How to Make a Steak and Kidney Pudding

Things You'll Need
- 8 oz. plain flour
- 3 oz. shredded suet or margarine
- 1/2 tsp. salt
- Water
- 1 1/2 lb. of stewing steak and kidney
- 1 pint pudding basin
- Rolling pin
- Muslin cloth to cover basin
- String
- Large pan

Mix the flour, suet and salt and add enough cold water to kneed into a stiff dough.

Cut off half of the dough and roll it out to a thickness to fit the pudding basin. Grease the inside of the basin line it with the dough.

Add salt and pepper to taste to some flour, cut the steak and kidney into 1/2-inch cubes and roll each cube in the flour mix.

Put the meat into the basin and add 1 cup of cold water.

Moisten the edge of the dough at the rim of the basin. Roll out the rest of the dough and place it on top to form a lid. Seal it by gently pressing the tines of a fork all the way around the rim. Prick the top of the dough "lid" to allow steam to escape.

Put the muslin cloth over the top of the pudding basin and tie around with the string, looping it over the top to form a handle.

Place the basin into the large pan and fill with water to just below the top of the pudding basin. Allow the dish to steam for 3 hours, then remove and serve.

Tips & Warnings
Keep checking the steamer to make sure that the water doesn't boil dry. Keep adding water as necessary to maintain a consistent level.
