How to Cook Turkey Gizzards

Turkey gizzards are usually included in the collection of neck bones, hearts, livers and gizzards known as giblets. Giblets are often used to make a stock or broth for dressings and soups. They are also used in making stuffing. However, gizzards can also be quite a delicacy on their own. This is an easy recipe for pickled turkey gizzards. The key to this recipe is to thoroughly cook the gizzards. Read on to learn how to cook turkey gizzards.

Instructions

Things You'll Need:

  • 1/2 gallon turkey gizzards
  • 3 cups vinegar
  • 2 cups water
  • 1 tsp. salt
  • 2 tbsp. sugar
  • 1 tsp. mixed allspice
  • Two dried red peppers
  • 1/2 stick cinnamon
  • Clove garlic, crushed
  • Large onion, peeled and sliced
  • Sterilized container
  1. Step 1

    Fill a saucepan with cold water and add the gizzards. Make sure the water in the saucepan covers the gizzards entirely.

  2. Step 2

    Heat the gizzards until the water comes to a boil then reduce the temperature to a simmer. Let the gizzards simmer for about an hour.

  3. Step 3

    Mix the vinegar, water, salt, sugar, red peppers and all the spices in a separate saucepan. Stir the mixture thoroughly.

  4. Step 4

    Heat the mixture and let it boil five minutes, then turn off the heat and let the mixture cool.

  5. Step 5

    Once the mixture has cooled down, add the garlic clove and stir it into the mixture.

  6. Step 6

    Take the sterilized container and layer the gizzards and onion slices alternately. Basically have a layer of gizzards then a layer of onions and so on.

  7. Step 7

    Once you are done layering the gizzards and onions alternately, pour the vinegar brine into the sterilized container.

  8. Step 8

    Cover the container and refrigerate for at least eight hours before serving.

Tips & Warnings
  • To get the best flavor out of your gizzards it is recommended that you keep them refrigerated for about eight to 12 hours.
  • The longer they sit the better tasting.
  • Always keep the pickled gizzards refrigerated as they have no preservatives and can cause a severe upset stomach.
