How to Make a Juicy Pork Roast

The perfect pork roast is moist and tender. Too often pork is overcooked in the belief that this is the only way to destroy the possibility of trichinosis, rendering it dry and tasteless. Pork roast can be served with roasted basil-and-butter red potatoes and cinnamon-garnished applesauce to make a savory main course. Slices of roast pork with a dash of salt and pepper, and horseradish or Dijon mustard make the perfect sandwich. Leftover roast pork is also delicious with mash potatoes and rich pork gravy.

  • Shallow baking pan
  • Rack (optional)
  • Aluminum foil
  • Meat thermometer

    Easy Steps to Cook a Juicy Pork Roast

  1. Step 1

    Rinse the roast and pat dry. This removes any possible bone chips or other scraps that sometimes get on a roast as it is carved by the butcher.

  2. Step 2

    Preheat oven to 350 degrees Fahrenheit (or 180 degrees Celsius).

  3. Step 3

    Put the roast, fat side up in a shallow open pan. You can put the roast on a rack in the pan if desired.

  4. Step 4

    Rub or sprinkle the roast lightly with seasonings for flavor. Salt, black pepper, thyme, basil, cardamom, cloves and cinnamon are all good. For a hint of sweetness and extra moistness, you can also smear applesauce all over the exterior-and yes, that's in addition to the spices.

  5. Step 5

    Roast at 30 minutes a pound, or until the internal temperature is 160 degrees Fahrenheit. As an example, a 4 pound roast usually takes 1 3/4 to 2 hours.

  6. Step 6

    Remove from oven and let rest 15 to 20 minutes before carving so that the juices settle.

Tips & Warnings
  • Ask the butcher to cut through the chine bone, so that the roast will be easy to carve.
  • Line your pan with aluminum foil. This makes clean up quick and easy.
