    • 2 cans tuna
    • Breadcrumbs
    • 1 onion, chopped
    • 4 eggs
    • 1 to 2 tbsp. lemon juice
    • Extra virgin olive oil for frying
    • Salt and pepper

        Open cans of tuna fish and drain excess liquid. Put into mixing bowl.

        Chop onion in fine pieces and add to bowl.

        Break eggs in separate bowl and lightly whisk to blend. Pour eggs into tuna bowl.

        Add lemon juice to tuna and mix well. Begin to add breadcrumbs a 1/4 cup at a time and mix well. You want to add enough breadcrumbs to hold patties together.

        Allow olive oil to get hot and carefully place patties into frying pan. Fry on both sides until golden brown. Let drain on paper towel. Serve and enjoy!

    Tips & Warnings

    • You can heat up a can of cream of celery soup and use as a sauce. You also can use tarter sauce or a creamy dressing such as ranch or thousand island.
