How to Cook Pasta Carbonara

  • 1 tbsp. olive oil
  • 2 shallots, diced
  • 1/2 lb bacon, sliced in strips
  • 1 onion, chopped
  • 1 clove garlic, finely chopped
  • 1 lb fettucini pasta
  • 2 egg yolks
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese
  • Salt and pepper, to taste

      Heat oil in skillet and sauté shallots.

      Add chopped onion, bacon strips and garlic. Cook until bacon is done. Remove from heat and set aside.

      Boil water and add fettucini. Cook to al dente for about 10 minutes.

      In a bowl, whisk together egg yolks, cream and Parmesan cheese.

      Combine the bacon mixture, pasta, cream sauce and lightly toss. Salt and pepper to taste.
