Salmon is probably one of the most delicate as well as flavorful fish you can buy. Even if you are not perfect in the cooking process, it can come out tasting good. Blackened salmon is very tasty when done right because you do not want to overload the fish with too many spices as to keep the flavor of the salmon. Most new cooks think blackened means burned. Blackened actually refers to the spices becoming slightly charred and giving the cut of fish this smoky and spicy flavoring. This article will tell you how to make tasty, well-cooked blackened salmon.

Difficulty: Moderate
Instructions

Things You'll Need:

  • Fresh Salmon; 1" - 1 1/4" thick, skin off
  • 1 Tablespoon Extra Virgin Olive Oil
  • Oven Safe Frying Pan
  • Stove Top with Oven
  • Tongs
  • Oven Mitt
  • Condiment Bowl
  • 1 Tablespoon Cayenne Pepper
  • 1 Tablespoon Chili Powder
  • 1/2 Tablespoon Cumin
  • 1/2 Tablespoon Garlic Powder
  • Dash of Dried Wasabi
  • 3 grinds of fresh Pepper
  • 1 grind of seal salt
  • Dash Onion Powder

    Prepping

  1. Step 1

Preheat your oven to 375 degrees.

  2. Step 2

Combine all of the spices into the condiment dish and mix very well.

  3. Step 3

Place the salmon onto your work surface and rub it lightly with the olive oil making sure that you get the entire fillet.

  4. Step 4

Preheat the pan over high heat.

  5. Step 5

Apply the spices liberally to the salmon. I prefer just the top of the fish to preserve the taste of the fish, but it is a personal choice so if you like it more hot then, by all means rub the spice all over the salmon.

  6. Step 6

With the pan hot, and your tongs ready, place the salmon into the pan (spice side down first unless you have seasoned the entire fillet in which case it's cooks' choice).

  7. Step 7

Allow the salmon to sear on the spiced side for 90 second to 2 minutes. Using your tongs gently move the fillet to prevent it from sticking and repeat for each side.

  8. Step 8

Once the salmon is seared on all sides place the pan into the oven for 4 minutes. Turn the fillet over once and cook for 2 minutes.

  9. Step 9

Remove from the oven and let rest 2-3 minutes and enjoy.

Tips & Warnings
  • You can serve blackened salmon with a nice, mild salsa for a Mexican flare.
  • One great thing about using spices and oven safe pans is the bits left in the bottom of the pan. Add a little butter and white wine and you have a wonderful pan sauce.
  • If you made your salmon very hot then serve with rice and other neutral starches or grains.
  • Any time you are using an oven safe pan always make sure to have tongs and an oven mitt handy.
  • Hot pan and cold oil will always result in splattering or possible fire so use room temperature oil.
  • Never flop your fish into the pan when using oil, only ever gently set.
