Things You'll Need:
- Roast – about 2 lbs. Per person
- Potatoes
- Carrots
- Onions
- Garlic cloves
- Salt
- Pepper
- Garlic powder
- Onion powder
- Cajun seasoning

Step 1
Peel the garlic and separate into cloves. Set aside.

Line a 3-inch deep roasting pan with foil. Set the roast in the roasting pan.

Make small slits in the roast about 5 inches apart. Stuff each slit with a small to medium sized garlic clove. Be sure to get the bottom of the roast.

Sprinkle the roast with the spices. You will want to use at least 2 teaspoons of each spice, except salt. You may want to use a bit less salt.

If you want a spicier roast, use more spices. For a less spicy, more bland-type roast to be used in sandwiches, sprinkle the spices lightly on the roast.

Cut the carrots into thirds. Cut the onions into quarters. If you are using small potatoes, use whole potatoes. If they are large baking potatoes, cut them into quarters. Arrange the vegetables around the meat.

Add 1 inch of water to the bottom of the pan. Roast on 275 degrees Fahrenheit until the center reaches 120-130 degrees Fahrenheit for a rare roast. USDA states 145 degrees Fahrenheit (in the center of the roast) is considered a safe temperature that will kill bacteria.

To make a roast in a slow cooker, prepare the roast the same way as you would for the oven. Cover the meat with water.

Cover and cook on 300 degrees Fahrenheit for four hours. Add vegetables and taste for seasoning adjustments.

Cover and cook until meat pulls apart with a fork.

To thicken the gravy using the slow cooker method, about two hours before the beef is done, remove about ½ cup of the liquid. Add 2 tbs. Cornstarch and mix until there are no lumps.

Add another ½ cup of the beef liquid and mix. Slowly pour the cornstarch mixture into the slow cooker, and stir until it is well incorporated into the rest of the broth.

Turn the heat up to 400 degrees Fahrenheit and let the broth come to a simmer or low boil. Let simmer for ten minutes, then turn the heat down to 300 degrees Fahrenheit. Finish cooking.
