Difficulty: Moderately Easy
Things You’ll Need:
- 5-6 Pound Fillet
- Olive Oil
- 1 tsp. Freshly Ground Black Pepper
- 1 1/2 tsp. Salt
- 1/3 Cup Heated Cognac
- Chopped Parsley
Step1
Gather your ingredients, and preheat the oven to 350 degrees.
Step2
Rub the beef shoulder fillet with a lot of oil. Sprinkle it then with freshly ground pepper.
Step3
Place the fillet in a roasting pan, and put it in the oven.
Step4
Cook it for 45 minutes at 350 degrees. You can continue to rub it a few times with oil if you prefer. The thermometer should read 120 degrees for rare. Cook it longer if this has not been reached.
Step5
Salt the roast again if you like. Let it rest for ten minutes before moving it to the hot platter.
Step6
Heat the cognac. Blaze the filet with the heated cognac and sprinkle with parsley.
