How to Make Double Stuffed Mushrooms

Mushrooms make the perfect appetizer or side dish to meat or chicken main dishes. This recipe is healthy (it's baked), tasty and easy to prepare.

Instructions

Things You'll Need:

  • 8 to 10 large fresh mushrooms
  • ¼ cup seasoned bread crumbs
  • 4 tbs. olive oil
  • ¼ onion, chopped finely
  • Parsley flakes
  • 2 tbs. grated Parmesan cheese
  1. Step 1

    Remove stems and core from mushrooms, being careful to keep cap intact. Wash very well and drain.

  2. Step 2

    Place in shallow oven-safe baking dish.

  3. Step 3

    Chop mushroom stems. In a small bowl, combine stems, onion, bread crumbs, parsley and cheese. Mix well. Add 2 tbs. olive oil. Mix until moist.

  4. Step 4

    Spoon bread crumb mixture into mushroom caps. Drizzle with remaining olive oil.

  5. Step 5

    Bake uncovered for 20 to 30 minutes or until mushrooms are browned.

Tips & Warnings
  • The larger the mushroom, the easier to stuff.
