Cracked wheat is the result of the grains of wheat (often called wheat berries) being broken into smaller pieces. Cracked wheat is commonly used to add texture to breads and muffinsand it gives the bread a nutty flavor. You can usually purchase cracked wheat at a health food store. The smaller the size of the cracked wheat, the faster it will cook.
