How to Make Asparagus with Mock Hollandaise Sauce
Asparagus is a nutritional powerhouse, packing loads of healthy vitamins into each four calorie spear. The green veggie contains very little sodium and is a good source of potassium, too. On its own, asparagus has no fat but just add a creamy white sauce and watch those calories skyrocket as the health benefits decrease.There's a way around that. Things You'll Need
- 1 bunch asparagus, ends trimmed
- 4 ounces fat-free cream cheese
- 3 tbsp. plain fat-free yogurt
- 1 tbsp. lemon juice
- 1 tsp. Dijon mustard
- 1/4 tsp each: dried dill, nutmeg

Remove cream cheese from refrigerator, unwrap from packaging and let soften in medium mixing bowl for 15-20 minutes or until pliable.

Meanwhile, wash asparagus spears and trim ends. Bring 2 inches of salted water to a boil in a medium heavy saucepan. Place asparagus in pan, cover, and turn heat to simmer for about 10-12 minutes or until fork-tender.

Drain asparagus and set aside.

Add yogurt, lemon juice, mustard and spices to cream cheese in bowl and mix well with rubber spatula or wooden spoon until the mixture is a creamy texture and cream cheese and yogurt are completely blended together.

Pour cream cheese mixture into small heavy saucepan and heat on medium high, stirring constantly, just until it boils. Remove from heat, pour into gravy boat or small pitcher and serve with asparagus.

Tips & Warnings
You can also blend the cream cheese and other ingredients in a blender or food processor until smooth, then pour into saucepan and follow the rest of the recipe.
Watch sauce carefully when heating so that it doesn't overboil. Remove from heat just when mixture starts to bubble.
