Make your own Middle-Eastern style appetizer plate with this simple hummus recipe. Surround the hummus dip with olives, feta cheese, red onion, red peppers, and pita bread, and you have a savory starter that's perfect for a hot summer night.

Instructions

Things You'll Need:

  • 1 whole wheat pita bread
  • 1/3 c. sliced red onion
  • 1/4 cup sliced black olives
  • 1/2 red bell pepper, sliced thin
  • 1/3 cup feta cheese
  • 1 15-oz. can of garbanzo beans, undrained
  • 1/4 cup olive oil
  • 1 tbsp. fresh minced garlic
  • 1 tbsp. lemon juice
  • 1 tsp. cumin
  • Sprigs of mint or cilantro, for garnish
  1. Step 1

    Choose a pretty serving plate.

  2. Step 2

    Slice pita bread into quarters. Warm it if you like.

  3. Step 3

    Slice the red onion on a cutting board. Chop the olives. Wash and seed the red pepper, then slice it thinly.

  4. Step 4

    Process garbanzo beans, olive oil, garlic, lemon juice and cumin in food processor until smooth. Taste and add salt and pepper if desired.

  5. Step 5

    Scrape the hummus into a serving bowl, and place in the center of your appetizer platter.

  6. Step 6

    Surround the hummus with sliced red onion, red peppers, black olives, feta cheese and sliced pita bread. Add a sprig of mint or cilantro for garnish, if desired.

Tips & Warnings
  • Cover any unusued hummus tightly and refrigerate for up to three days.
  • You can also serve this with a basket of flatbread or a separate plate of raw veggies such as baby carrots, celery sticks and radishes.
