Instructions

Things You'll Need:

  • 3-4 boneless, skinless half chicken breasts
  • 2 sheets frozen puff pastry, thawed
  • 8 oz mozzarella cheese
  • 1 cup pesto sauce
  • 1 egg beaten
  • 1 tbsp water
  1. Step 1

    Preheat oven to 425 degrees.

  2. Step 2

    Slice or pound chicken into thin pieces.

  3. Step 3

    Brown lightly in pan lightly coated in cooking spray.

  4. Step 4

    Place in refrigerator until ready to use.

  5. Step 5

    Thaw puff pastry according to package directions.

  6. Step 6

    Roll out each sheet into slightly larger rectangle.

  7. Step 7

    Cut each sheet into four equal pieces.

  8. Step 8

    Remove chicken from refrigerator and cut into small pieces to fit on half of each pastry square.

  9. Step 9

    Place a piece of chicken, a slice of mozzarella cheese and 1 tablespoon of pesto sauce on each square.

    Brush half the edges of each pastry square with egg mixture, fold over and seal with fork.

    Transfer to cooking sheet sprayed with nonstick cooking spray. Brush each pillow with egg wash.

  12. Step 12

    Bake at 425 degrees until golden brown, approximately 20 mintues.

    Serve with remaining pesto or spaghetti sauce.

Tips & Warnings
  • This recipe is versatile-you can substitute pesto sauce for spaghetti sauce and include ham with it as well.
  • For a more creamier chicken flavor, use Cream of Chicken soup.
  • To spice it up, use canned chili peppers.
  • Use cheddar cheese instead of mozzarella for a lighter taste
  • If you put the chicken pillows in a dark pan, decrease the cooking time to 15 minutes.
