How to Make Red Beans and Rice with Pork

Most people make red beans and rice on the stove. You can make red beans and rice with pork in the slow cooker and save yourself a lot of prep time. You will need about 6 hours of cooking time.

Instructions

Things You'll Need:

  • 2 medium bags any brand red beans and rice
  • 2 lbs. roast pork
  • 2 strips thick sliced bacon
  • Salt
  • Pepper
  • Onion powder
  • Garlic powder
  • Cayenne pepper
  • 1 pound baby pearl onions or 2 large onions
  1. Step 1

    Set the slow cooker to 350 degrees F. Cut the bacon into thirds. Cook the bacon in the slow cooker until it is translucent. Add the roast pork and season with salt, pepper, onion powder and at least 2 tsp. cayenne pepper. Let it brown on both sides for about 20 minutes per side. Add about 8 cups water. Let this cook for two hours.

  2. Step 2

    Add the red beans and rice to the pork. Leave uncovered and cook for two hours, then add the onions. Taste for seasoning. This should have a "bite" to it, but it should not be overly spicy. You may add more cayenne pepper to taste. Add about 1/2 tsp. and let it cook in for about a half an hour. Season to taste.

  3. Step 3

    In the last hour, add the onions. Cover and let simmer for the last hour. If the mixture is too juicy for your taste, remove the cover and let cook for another half hour. The rice in this recipe is going to be very soft. If you like a little gravy with it, just let it in the slow cooker for less time.

Tips & Warnings
  • When you put the leftovers in the refrigerator, it will become very thick. To reheat, just add about 1/4 cup water. You can reheat on the stove top or in the microwave.
  • Be careful with the cayenne pepper. You do not want to overpower the flavor of the rice.
