How to Make Easy Shrimp Scampi and Pasta

Shrimp scampi is one of those dishes that we don't eat all the time but absolutely love when when we do. After all, who has the time to prepare it on short notice?This recipe allows even the busiest folks to enjoy the savory combination of shrimp and garlic in just a few minutes' time.

Instructions

Things You'll Need:

  • 1½ pounds large shrimp (about 16 to 24), precooked
  • 1/3 c. butter
  • 2 cloves garlic, minced
  • ¼ c. dry white wine
  • 2 tbs. lemon juice (fresh squeezed is best)
  • 2 tbs. fresh parsley, chopped
  • Salt and pepper, to taste
  • Grated parmesan cheese
  • 1 lb. pasta, cooked

    How to Make Easy Shrimp Scampi & Pasta

  1. Step 1

    Melt butter in large skillet over medium heat. Cook garlic 1 or 2 minutes or until softened but not browned.

  2. Step 2

    Add shrimp, wine and lemon juice; cook about 2 minutes, turning shrimp gently. Do not overcook.

  3. Step 3

    Add chopped parsley, salt and pepper, and cheese before serving over your favorite pasta.

Tips & Warnings
  • Of course, you can serve scampi over your favorite pasta, but linguini or capellini (angel hair) don't "crowd" the flavors of the shrimp and garlic.
  • This dish is also terrific as as part of a light lunch, served with a salad.
