Things You'll Need:
- The ingredients below and a 9-inch-by-9-inch baking pan.
- 1 1/2 cup whole wheat flour
- 1/4 cup wheat germ
- 1 tsp allspice
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup chopped walnuts
- 1/4 cup light olive or canola oil
- 1/2 cup fruit juice (pear, apple, or a combination)
- 3/4 tsp vanilla
- 1 cup banana, mashed

Step 1
Preheat oven to 350 degrees F and lightly grease a 9-inch-by-9-inch baking pan.

Mash approximately 4 to 5 medium, ripe bananas to make about 1 cup of banana "puree."

Combine all dry ingredients in one bowl and all the wet ingredientsin another bowl. Add the wet ingredients to the mashed banana.Add the wet ingredients to the dry ingredients and stir to blend thoroughly.

Pour batter into baking pan and bake for 40 minutes or untila toothpick inserted in the center comes out clean. Do not overbake.Let cool completely before slicing. This freezes well.
