Step 1
Skip the cream sauces. Most sauces that have lactose are going to be made with milk or cream. Milk gravy, Alfredo sauce, Béchamel sauce and cheese sauces all have lactose and all need to be avoided.

Select an Espagnole sauce. It is made from a dark rue, veal stock, water, browned bone pieces, bits of meat, vegetables and seasonings. If you select this sauce make sure the fat used in the roux is lactose free.

Sample a tomato sauce. Tomato sauces come in many varieties. In fact, most cultures today have their own tomato sauce. Spanish cultures have moles, salsas and green tomato sauces, and the Italians have Puttanescas, Bolognese sauces and marinaras. India cuisine also uses curried tomato sauces in their recipes.

Step 4
Try a Veloute sauce. This sauce is made from a light stock and a blond roux. Stocks that are traditionally used for this sauce include chicken stock, fish stock or veal stock. There are several other sauces that can be made from this sauce including Poulette, Aurora and Hungarian.
