How to Make Mango Salsa

By substituting mango for tomato, this salsa provides a sweeter tasting garnish for chicken, fish, salad or just as a dip. It's easy to prepare, too, making it a perfect last-minute complement to any meal.

Instructions

Things You'll Need:

  • 4 mangoes, diced
  • 1 large red pepper, diced
  • 1/2 onion, chopped
  • 1/2 tsp. crushed red pepper
  • 2 cloves garlic, chopped
  • 2 tsp. cilantro
  • 1 tsp. ground ginger
  • 1 cup brown sugar
  • 1/2 cup lime juice
  • 1 cup cider vinegar

    How to make mago salsa

  1. Step 1

    Combine all ingredients, except brown suagr and ginger, in a saucepan.

  2. Step 2

    Bring to a simmer, add sugar and ginger. Stir until dissolved.

  3. Step 3

    Bring mixture to a full boil; reduce heat and simmer for 5 minutes.

  4. Step 4

    Remove from heat; completely cool before eating.

Tips & Warnings
  • This recipe can be cut in half if a smaller amount is desired.
  • Keep covered in regrigerator for up to one week.
  • While mixture is still hot, process in sterilized sealed jars according to canning instructions. Store in dry cool place for up to six months.
