Summertime is the perfect time to serve light and refreshing meals. One of the most popular summer meals is of course salads. Salads can be extremely refreshing, but they can also contain a lot of calories. It doesn't have to be this way though. In fact, salads can be a healthy meal if you just follow a few simple steps.

Difficulty: Easy
Instructions
  1. Step 1

Avoid iceberg lettuce. Iceberg lettuce has very little nutritional value. That's why you need to choose darker varieties, such as romaine. Take time to see what your grocery store offers. Not only will this make your salad healthier, but it will taste better as well.

  2. Step 2

Add baby spinach. Baby spinach is loaded with nutrients and works well in almost any salad. A serving of baby spinach has 110% of your daily Vitamin A, 40% of your daily Vitamin C, and 15% of your daily iron.

  3. Step 3

Choose colorful vegetables. The key to making any dish healthy is to make it colorful. Add orange bell peppers, grape tomatoes, sliced zucchini, red onions, and sliced carrots. These are just a few examples. You can add whichever vegetables you like best, just make sure they're nutritious.

  4. Step 4

Make your own salad dressing. Salad dressing is what normally makes salads so unhealthy. By making your own, you ensure that the dressing is healthy. For example, use olive oil, lemon juice, cracked black pepper, and sea salt to prepare a simple, yet heart healthy, dressing.

  5. Step 5

Look for low-fat toppings. Many of your favorite salad toppings can be found in low-fat versions. For example, you can find low-fat cheese, bacon bits, and even meat.

Tips & Warnings
  • Low-fat ranch dressing can be made using a packet of ranch dressing mix and fat-free buttermilk.
