  • 8-10 medium red potatoes
  • 3 TBSP olive oil
  • 2 tsp. dried minced garlic
  • 2 tsp. dried parsley
  • salt and pepper to taste

  1. How to Make Oven Roasted Red Potatoes

    • 1

      Preheat oven to 350.Scrub red potatoes, but don't peel. Cut each potato into quarters.

      Place potatoes into 9 x 13 inch baking dish. Pour olive oil over top. Using spatula, toss potatoes until evenly coated.

      Sprinkle spices over potatoes and toss again.

      Place potatoes in oven and bake uncovered at 350 for one hour. Open oven and stir potatoes every 15 minutes or so to keep them from sticking to bottom of pan.

      Remove and serve immediately. Potatoes are done when they begin to turn brown on top and are easily pierced with a fork.

Tips & Warnings

  • Refrigerate leftover potatoes, slice and stir-fry in 1 TBSP olive oil for a simple side dish.
