How to Cook Savory Sausage with Orzo

Things You'll Need
- 1 lb. precooked sausage, cut into bite size pieces
- 1 tbsp olive oil
- 1 cup dried orzo
- 1 can (14 oz) beef broth
- 1/2 cup water
- 1 teaspoon Italian seasoning
- 2 medium zucchini, chopped
- 1 bunch green onions, chopped
- 1/2 red sweet pepper, chopped
- 1/4 c. frozen peas (optional)
- Dried parsley, for garnish (optional)

Brown sausage in olive oil in large heavy skillet over medium high heat for about 2 minutes, then add dried orzo. Cook and stir for one minute.

Slowly add beef broth, 1/2 cup water, and Italian seasoning. Bring to a boil, reduce heat, and simmer for 5 minutes.

Add zucchini, cover, and simmer for another 4-5 minutes, until orzo and zucchini are fork-tender. If using peas, stir in at this point.

Remove lid, stir in green onions and red pepper and stir. Season to taste with salt and pepper.

Transfer to serving dish and garnish with dried parsley, if desired.

Tips & Warnings
Use low-sodium beef broth if desired. Taste and adjust seasonings as necessary.
You can also use 1/2 teaspoon dried oregano and 1/2 teaspoon minced dried garlic in place of the Italian seasoning.
