  • 1 lb. precooked sausage, cut into bite size pieces
  • 1 tbsp olive oil
  • 1 cup dried orzo
  • 1 can (14 oz) beef broth
  • 1/2 cup water
  • 1 teaspoon Italian seasoning
  • 2 medium zucchini, chopped
  • 1 bunch green onions, chopped
  • 1/2 red sweet pepper, chopped
  • 1/4 c. frozen peas (optional)
  • Dried parsley, for garnish (optional)

      Brown sausage in olive oil in large heavy skillet over medium high heat for about 2 minutes, then add dried orzo. Cook and stir for one minute.

      Slowly add beef broth, 1/2 cup water, and Italian seasoning. Bring to a boil, reduce heat, and simmer for 5 minutes.

      Add zucchini, cover, and simmer for another 4-5 minutes, until orzo and zucchini are fork-tender. If using peas, stir in at this point.

      Remove lid, stir in green onions and red pepper and stir. Season to taste with salt and pepper.

Tips & Warnings

  • Use low-sodium beef broth if desired. Taste and adjust seasonings as necessary.

  • You can also use 1/2 teaspoon dried oregano and 1/2 teaspoon minced dried garlic in place of the Italian seasoning.
