How to Make Great Vegetarian Enchiladas

Contrary to popular belief, one can be vegetarian and still enjoy great Mexican food. In fact, most Mexican dishes can be easily modified to a great tasting vegetarian option. In this article, we will look at how to make vegetarian enchiladas that are simple, fast and taste great.

Instructions

Things You'll Need:

  • 1. Can of chopped tomatoes
  • 1. Small Onion
  • 1. Courgette or Zucchini
  • 1. Leek cut into pieces
  • 1. Green pepper
  • 100g of cheese
  • pinch of Paprika
  • pinch of Chili powder
  • pinch of Cumin
  • 1. Vegetable stock cube
  • 1. Clove of Garlic
  • Floured tortilla shells
  • 1. Small container of cream

    How to Make Great Vegetarian Enchilladas

  1. Step 1

    Chop your onions, courgette, Pepper, garlic and Leek into small pieces. Place all items into a heated pan with oil. Cook until they are slightly soft.

  2. Step 2

    Add your can of chopped tomatoes. Cook together for about 10 minutes, stirring frequently. Add the vegetable stock cube when the mixture starts to boil slightly.

  3. Step 3

    Shake in your spices and continue cooking. Taste the mixture, if it has an overwhelming tomato taste add some of the cream. This will dull it down. Continue adding the cream until the mixture is to the taste that you like.

  4. Step 4

    Get your tortilla shells. Take your mixture off of the heat. Place into the tortilla shells and wrap them around. They should look like a small burrito. Place into the shells until the mixture is gone.

  5. Step 5

    Place the enchiladas on a baking next to each other. Cover the tops with cheese and place in the oven on a medium heat to bake. Keep in the oven until the cheese melts. Remove and they are ready to eat.

Tips & Warnings
  • You can experiment with different vegetables for the mixture.
