This chicken recipe only sounds difficult. Actually, the hardest part about putting it together is remembering to buy the dried cherries (I like the ones at Trader Joe's).

Instructions

Difficulty: Easy

Things You’ll Need:

  • 4 boneless, skinless chicken breasts, cut into bite sized pieces
  • 1-1/2 TBSP olive oil
  • 1/2 cup dried tart red cherries
  • 1 red apple, seeded adn chopped
  • 1/2 cup chopped walnuts
  • 4 teaspoons brown sugar, packed
  • 3 TBSP cider vinegar
  • 1/2 teaspoons ground ginger
  • Salt and pepper

How to Make Chicken with Cherry Ginger Chutney

Step1
On cutting board, chop chicken into bite size pieces. Sprinkle with salt, pepper and 1/4 tsp of the ginger.
Step2
Saute chicken in heavy skillet over medium high heat in the olive oil until no longer pink inside, stirring frequently (about 10 minutes), then transfer to a serving platter, cover tightly with foil to keep warm.
Step3
Add fruit and nuts to skillet and cook for two minutes, stirring frequently.
Step4
In small mixing bowl, stir together brown sugar, 1/4 cup water and vinegar, and remaining 1/4 teaspoon ginger. Add to fruit and nuts and skillet. Cook and stir for 30 seconds.
Step5
Remove foil from chicken on serving plate. Carefully pour sauce over chicken. Serve with rice, crusty rolls and a salad.

Tips & Warnings

  • You can also use chicken thighs (boneless) for this recipe if you prefer dark meat.
  • Substitute golden delicious apple for a slightly different flavor.
