Here's a recipe for a simple guacamole appetizer that uses tiny one-bite toasts instead of the usual chips and salsa served alongside. Serve this guacamole with both plain and cheese-topped toasts. Try it for your next party.

Things You'll Need:

  • 2 avocados
  • 1/4 cup good-quality medium salsa
  • 1-2 TBSP sour cream
  • 1 TBSP olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 package (about 24) tiny toasts (from the deli section)
  1. Step 1

    Peel two ripe avocados and slice into a mixing bowl. Add salsa and sour cream and mash well with a fork.

  2. Step 2

    Place one of the avocado pits into the bowl (this will keep the guacamole from turning brown) and cover tightly with plastic wrap. Refrigerate for 30 minutes to let flavors blend.

  3. Step 3

    Open package of toasts and place half in a small bowl or basket to use as dippers for the guacamole. Place the other 12 toasts on an ungreased baking sheet.

  4. Step 4

    Rub each of the toasts with a dab of the olive oil, then sprinkle Parmesan on top. Place under broiler set to high and watch carefully for about 2 to 3 minutes.

  5. Step 5

    Remove the toasts as soon as the cheese begins to bubble. Arrange on small plate next to basket or bowl of plain toasts. Remove the guacamole from refrigerator, take out the pit and serve.

Tips & Warnings
  • This recipe is easily doubled or tripled. Just buy four or six avocados and 2 or 3 packages of the tiny toasts.
