How to Prepare Cherry Filling for Black Forest Cake

Black forest cakes originated in the Black Forest of Germany. They are dense, flavorful, and very pretty. They traditionally have a buttercream filling, flavored with Kirsch, or cherry liquor.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 1/2 cups confectioners' sugar
  • 1/3 cup unsalted butter
  • 1 large egg
  • 2 tablespoons Kirsch (Cherry Liqueur)
  • Stand mixer
  • Egg separator
  • Large mixing bowl
  1. Step 1

    Begin by adding the 1 1/2 cups of confectioners sugar and the 1/3 cup of unsalted butter to your mixer. Beat these two ingredients together until they are well blended.

  2. Step 2

    Separate the egg yolk from the egg white using an egg separator. If you do not own an egg separator you can still separate the yolk from the white by transferring the broken egg back and forth between the two halves of the shell. Allow the white to go into a bowl while keeping the yolk in the shell. After separating the egg discard the white.

  3. Step 3

    Add the egg yolk to the sugar and butter mixture. Allow the mixer to combine these ingredients for 3-5 minutes. The mixture should become light an fluffy.

  4. Step 4

    Remove the mixture from the mixer and place into a large bowl.

  5. Step 5

    Add the 2 tablespoons of Kirsch (Cherry Liqueur) to the mixture and fold in until it well incorporated.

  6. Step 6

    Spoon the mixture evenly between the layers of your Black Forrest Cake.

Tips & Warnings
  • If you can find Kirschwasser, use it. Kirsch is different than many cherry liqueurs in that it is not sweet It will not add additional sweetness to your finished cake.
  • Some modified recipes call for whipped cream. Please don't do that. Black forest cake is made to be dense and heavy.
