  • Variety of dried legumes

    Vegetarian Entrees

  1. Step 1

Instead of Chicken Parmesan, try Eggplant Parmesan. Grilled Eggplant with olive oil and butter can even be laid over Alfredo sauce for a gourmet vegetarian treat.

  2. Step 2

Veggie kabobs are delicious. You can marinate green peppers, onions, mushrooms, cherry tomatoes and pineapples in Teriyaki sauce. Grilled over open flames, these kabobs are nutritious and delicious.

  3. Step 3

Use a combination of dried lentils and unflavored oatmeal in your favorite chili recipe. You'll be surprised who doesn't even notice it's meatless.

  4. Step 4

A thick veggie stew is a great way to warm up those cold winter days. Be sure to add some dried beans, the added protein is an important winter nutrient.

  5. Step 5

You can stuff portabella mushroom caps with a cheesy risotto and bake in the oven until the mushroom caps are softened.

  6. Step 6

There are recipes available online for meatless veggie burgers. These are tasty and so much more delicious than the store-bought ,meatless patties. Many of these burgers use lentil beans, a small, thin legume popular in middle eastern cooking that is ready in around a 1/2 hour.

  7. Step 7

When many people think of eliminating meat from the diet, they think of Tofu. Tofu is a mad-made product that is popular in Asian cooking. There are many ways to prepare Tofu, but it is not a necessary ingredient in a vegetarian diet. If you don't like it, there's still hope.

Tips & Warnings
  • Meatless cooking requires different amounts of spices and seasonings, so be sure to taste each recipe as you're cooking to be sure you enjoy the flavor.
  • Cutting vegetables can be dangerous. Always make sure the outsides of your vegetables are dry and keep your fingers away from your knife blade.
