How to Make an Asparagus and Swiss Cheese Omelette

An omelette is a great way to start the morning, as the protein from the eggs helps to keep hunger at bay for some time. The tender asparagus and delicious swiss cheese used in this recipe keep this breakfast staple interesting.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 eggs
  • A splash of milk
  • 1 tbsp extra virgin olive oil
  • 3 asparagus spears
  • 2 slices of swiss cheese
  1. Step 1

    Beat the eggs together with the milk in a bowl. Add fresh ground black pepper to taste if desired. Set aside.

  2. Step 2

    Peel the asparagus from approximately 1 inch below the tip to the base. Hold each spear at either end and bend the asparagus, allowing it to break naturally. Discard the ends and chop the remaining asparagus into 1 inch lengths.

  3. Step 3

    Heat the oil in a small pan and add the asparagus. Cook over medium-low heat for 3 to 4 minutes, or until tender. Spread out the asparagus pieces so they will be well distributed in the final product.

  4. Step 4

    Reduce heat to low and pour the egg mixture into the pan, being sure to coat the entire bottom. As the egg cooks, use a spatula to pick up the edges and allow uncooked egg to run into the revealed space.

  5. Step 5

    When the egg is cooked almost entirely through, so that there is none running on the surface of the omelette, lay the swiss cheese on top.

  6. Step 6

    Carefully loosen one half of the omelette and fold it on top of the other half.

  7. Step 7

    When the cheese is melted, remove the omelette from the pan and serve.

Tips & Warnings
  • Don't fret if the omlette breaks a little while cooking or serving--it may not be as pretty, but it will still taste just as good.
