How to Heat Cherry Filling for Black Forest Cake

When you are making a Black Forest cake, one of the most important ingredients in it is the cherry filling. This must be prepared before it goes into the cake. Here's how to make a great cherry filling for your favorite Black Forest cake recipe.

Things You'll Need:

  • 2 lbs. of canned sour cherries, drained, reserving the juice
  • 1/3 cup granulated sugar
  • 5 tsp. cornstarch
  • 2 tbs. Kirsch (cherry liqueur or brandy)
  • Heavy pan
  • Stirring spoon
  1. Step 1

    Make the cake from your favorite recipe. A Black Forest cake is a rich dessert, and there are many ways it can be made. After you have found the recipe you like and have made the cake part, it is time to make the cherry filling.

  2. Step 2

    Use a heavy saucepan along with a heavy spoon for stirring. Combine the cherry juice, sugar and cornstarch and mix thoroughly. Bring this mixture to a boil over medium heat.

  3. Step 3

    Simmer the mixture, stirring almost constantly, for 1 to 2 minutes.

  4. Step 4

    Stir in the cherries and the Kirsch. Transfer the mix to a bowl and set aside to cool.

  5. Step 5

    Assemble the cake using the cherry filling and the cake from your favorite recipe. Typically, you will have three round layers of cake to work with. You need to invert one onto a cardboard round, brush it with syrup and spread half of your cherry mixture over the cake. Spread whipped cream over the cherries, and set your next round piece of cake over top. Repeat with the rest of your cherry filling, and add more whipped cream. The last round of the cake then goes on, and you may then decorate it to your recipe’s specifications.

Tips & Warnings
  • This mixture can be made 1 day in advance. Be sure to cover it well and refrigerate if you do.
  • Keep the heat on low to medium, and be careful not to get burned.
