Eggs (1 per zucchini)
Breadcrumbs (1 cup per zucchini)
Extra virgin olive oil
Baking sheet

Instructions

  Preheat oven to 400 degrees F.

  Cut off the ends of the zucchini, then slice it through the middle. Cut each half into strips of approximately 1/2 inch thickness.

  Beat the egg(s) in a shallow bowl.

  Dip the zucchini sticks in the egg batter and then the breadcrumbs, being sure to coat them thoroughly.

  Arrange the breaded zucchini sticks on a baking sheet. Drizzle with olive oil and bake for 10 to 15 minutes, turning once. Enjoy.
