How to Choose Lowfat Sauces for Meat Dishes
Are you trying to loose those extra pounds without having to over compromise your palate? You can still enjoy your meat dishes, by switching your high calorie sauce to a low fat alternative. Usually when you are making a rich, creamy sauce for a meat dish you would use flour and butter as the base for the sauce. These are blended together and heated to form a roux. But you can make low fat sauces that are just as tasty and twice as healthy.
Things You'll Need
- 21/4 cups of fat free milk
- 3 tablespoons of cornstarch
- 1/4 cup of shallots, finely chopped
- 1/2 cup low fat cheese, grated
- Salt and black pepper to season
- Small saucepan
- Hand whisk or wooden spoon

Add the cornstarch to 1/4 cup of the milk and stir into a smooth paste.

Add the chopped shallots and 2 cups of the milk to a small pan and warm slowly on a low heat.

Add the cornstarch paste to the saucepan as soon as the milk starts to warm. Keep stirring gently with a small hand whisk or wooden spoon so that the sauce does not become lumpy.

While stirring add the cheese and continue heating slowing until the cheese has melted and the sauce has thickened then remove from the heat. Add salt and pepper to taste and stir in. You can also add a tablespoon of Dijon mustard to add an extra tang and compliment the flavor of the cheese. This sauce can be used in a lasagna, on meat, macaroni or your favorite vegetables.

Tips & Warnings
Make sure the sauce is quite hot before you add the cheese.
Add the cheese a little at a time.
Stir constantly.
Use a medium heat, not too high.
