This rice gets its name from the Hindi language: basmati means "queen of fragrance."When cooked, the rice has a sweet, nutty aroma and fluffy texture. The rinsing is an important step that helps rice retain its starchy texture.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 1/2 cups basmati rice
  • 2 whole cinnamon sticks or 1-1/2 tsp powdered
  • 2 whole cloves or 1 tsp powdered cloves
  • 2 tsp dried cardamom
  • 1/4 c slivered almonds
  1. Step 1

    Put uncooked rice in heavy saucepan with lid and add cold water to cover. Rinse rice, drain and add water again. Keep rinsing until water runs clear, then cover with water and soak for 30 minutes.

  2. Step 2

    Using a sieve, drain the rice thoroughly and put back into pan with 2 cups cold water.

  3. Step 3

    Add the spices, stir the rice mixture and bring to a boil over high heat.

  4. Step 4

    Turn the heat to low, cover and simmer for 25 minutes.

  5. Step 5

    Just before serving, lift lid and remove whole cinnamon sticks and cloves, if used. Fluff with fork and add almonds.
