This is a delicious cake. Bring copies of the recipe with you if you take it to parties. My kids beg for me to make this. It tastes like a chocolate eclair, but better.

Instructions

Things You'll Need:

  • Graham Crackers
  • cream cheese
  • Kool Whip
  • Prepared frosting (trans fat free preferably)
  • Confectioners sugar
  • unsweetened chocolate
  • butter
  • milk or non-dairy substitute
  • brownie pan
  • vanilla pudding box mix

    Ingredients
    22 1/2 sheets (about 1 [14-ounce] box) low-fat honey graham crackers
    Cooking spray
    3 cups fat-free milk
    2 (3.4-ounce) packages low fat or fat-free vanilla instant pudding mix
    1 (8-ounce) tub low fat or fat-free cream cheese
    1 (8-ounce) tub frozen reduced-calorie whipped topping, thawed
    1/4 cup fat-free milk
    2 tablespoons stick margarine or butter, softened
    2 tablespoons honey or agave nectar
    2 ounces unsweetened chocolate, melted
    1 1/2 cups sifted powdered sugar

    Place graham cracker sheets in the bottom of a 13 by 9 inch baking pan or dish, coated with cooking spray. Mix the milk, pudding mix, and cream cheese together in a bowl with a mixer until combined and thickened. Fold in the Kool Whip. Then pour half of the mixture on top of the graham crackers and spread evenly across the graham crackers. Top with more graham crackers, make them even and flat across so the frosting is flat and even across the cake.

    Combine the 1/4 cup of milk, butter, honey and chocolate in a bowl and mix with mixer. Add powdered sugar and beat well. The spread the glaze over top layer of graham crackers. Cover with foil, and chill overnight.

    You also can do the cheat version and buy a tub of chocolate frosting, melt it and then pour the melted frosting across the top of the cake.

Tips & Warnings
  • The longer this is allowed to sit, the better it will be because the graham crackers will have a chance to absorb more of the pudding mixture.
  • I use the low fat as opposed to the non fat because fat is what makes us feel full
  • I wouldn't consider this to be a healthy recipe due to a few of the ingredients, but we all occasionally splurge.
