How to Make Tsatsiki Sauce

Tsatsiki sauce is a quintessentially Greek sauce, easily found at any Greek grocery. Made mostly out of yogurt, cucumbers and garlic, its tangy flavor can serve as a topping for everything from falafel to kebabs to steak. But despite its distinctive flavor, its preparation is quite simple.

    • 4 cups of plain yogurt
    • 2 cucumbers
    • 2 tablespoons of olive oil
    • 1 teaspoon of lemon juice
    • 3 cloves of garlic
    • Salt

        Line a sieve with damp of double-thickness cheesecloth. Spoon the yogurt into the sieve, and place the sieve over a bowl.

        Sit yogurt in the refrigerator for 2-3 hours, or until the yogurt has reduced to half its size.

        Cut your cucumbers into long, thin strips, and place them into a colander to drain. Sprinkle them well with salt, and let sit for 30-60 minutes. Mince the garlic finely, in another bowl.

        Add the cucumbers, garlic and olive oil to your yogurt, and mix well.

        Refrigerate for two days, to let the flavors mingle. Stir before serving.
