Gelatin works magic, turning simple cream or fruit mixtures into smooth mousses or molded desserts. Always dissolve the gelatin completely during heating and never allow a gelatin mixture to boil. Let's find out how to make a yummy dessert with mangos.
Things You'll Need
- 1 envelope unflavored gelatin
- 2 ripe mangoes, peeled and cut in to bite size chunks
- 1 can cream of coconut
- 1/2 cup fresh lime juice
Sprinkle gelatin over 1/4 cup cold water in a large saucepan. Let stand 5 minutes.
Use a blender at medium speed and blend remaining ingredients until smooth.
Heat gelatin mixture over low heat, striring constantly for 2 to 3 minutes until completely dissolved. Do not boil.
Add to mango mixture in blender and blend until combined.
Pour mixture into eight 4 ounce custard cups. Cover and refrigerate 4 hours until well chilled.
