Make Mini Bagel Bites

Although mini bagel bites are considered to be more of an appetizer, they are quick and easy to make for lunch when you or your children are in a hurry and on the go. They can also be made ahead and stored in the fridge on a plate covered with cellophane for your middle school or high school children when they get home from school, a sporting event, or other activity. You can also make bagel bites with your toddler or preschool age child for a fun weekend lunch or snack. Does this Spark an idea?

Things You'll Need

  • 8 mini bagels sliced in half
  • 1 jar fat free pizza sauce
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper (you can use the yellow or red bell peppers if you like a little sweeter taste)
  • 1 cup shredded fat free mozzarella or cheddar cheese (or both)
  • Non stick cookie sheet or cake pan
  • If microwaving, a microwave save plate
  • Oven preheated to 400 degrees. (They can also be microwaved for l minute on high).

Instructions

    • 1

      Place the bagels cut side up on the baking sheet or microwave safe plate.

      Spread the desired amount of pizza sauce on each bagel half.

      Put the chopped onions and bell peppers on top of the bagels.

    • 4

      Sprinkle the cheese(s) on top of the vegetables.

    • 5

      Bake for seven to eight minutes or until the bagels are hot and the cheese(s) melted.

      If microwaving, follow steps one through three above, placing the bagels on the microwave safe plate instead. Microwave for one minute to one minute and thirty seconds or until the cheese(s) is melted.

      Let cool until the bagel bites can be picked up and eaten.

Tips & Warnings

  • You can add a few sliced canned mushrooms or black olives if you wish.
