Instructions

    • 1

First, using a four burner gas grill, preheat the grill by turning the two outer burners on high. Leave the middle two burners off as they will still reach a medium heat. Let the burners heat up for about 5 to 10 minutes.

    • 2

While the grill is heating, wrap the steaks in paper towels and let sit for 10 to 15 minutes at room temperature. Then, lightly coat both sides with olive oil, salt, and pepper.

    • 3

Next, place your steaks over the direct heat for 1 to 2 minutes util they have grill markings on them. Use tongs to flip them and sear the second sides.

    • 4

Move the steaks to an unheated burner and cook them for at least 5 more minutes.

    • 5

Transfer the steaks to a plate and test them for doneness with an instant-read meat thermometer (medium rare is 145 degrees).

    • 6

Finally, let the steaks stand for a full 5 to 7 minutes to reabsorb all their juices, and serve.
