Nori, or seasoned dried seaweed, is a popular snack food in Japan, sold in individually wrapped pieces plain or flavored with teriyaki, barbecue or other seasonings. It's a powerhouse of vitamins and minerals and low in fat, although sodium count can be high with the seasoned varieties.Most of us in the U.S. associate nori with sushi rolls. It's the outside wrapping used to hold all the tasty bits inside, but there are lots of things you can do with nori besides wrap sushi.Individually-wrapped packages of nori sheets are available in ethnic grocery stores for about $1.50 per dozen. Instructions

    • 1

      Try rolling tuna, egg or chicken salad into nori sheets for a low-carb lunch snack.

      Make mini-burros with scrambled eggs and sausage. Tuck the mixture into sheets of nori and serve.

      Hardboil eggs and then slice each into quarters. Roll each quarter egg into a nori sheet along with a thinly sliced dill pickle.

      Mix cold leftover rice with a little ranch or Thousand Island dressing in bowl. Spoon onto nori sheet, roll up and serve.

      To use leftover baked potatoes, slice cold and roll into sheets of nori. Serve with sour cream or ranch dressing for dipping.
