Fruit salsa is a colorful side dish that can be customized to go with chicken, pork, or roast beef and is also a nice accompaniment for Mexican entrees and egg dishes.Follow the rule of three. Three fruits, combined with onion and spices, is what makes this salsa special.

Things You'll Need:

  • Three fruits: such as blueberries, kiwi and strawberries; pineapple, oranges and mango; cherries, blueberries and pears; peaches, watermelon and canteloupe
  • 2 tbsp. diced red onion
  • 1 tbsp. chopped fresh cilantro
  • Dash red wine vinegar
  • Salt and pepper
  1. Step 1

    Wash fruit and peel, if desired.

  2. Step 2

    Dice fruit into small pieces.

  3. Step 3

    Chop onion and cilantro into pieces the same size as fruit.

  4. Step 4

    Toss in a mixing bowl with spatula, adding a dash of red wine vinegar and salt and pepper.

  5. Step 5

    Cover and refrigerate for an hour or overnight to blend flavors.When you're ready to serve it, remove it from the fridge and let stand for 20 minutes for full flavor.

Tips & Warnings
  • For an even faster version, use pre-chopped red onions from produce section.
  • Try to vary the color of fruit (red, yellow, orange) for a pleasing result.
  • Hispanic grocery stores offer tropical fruit year-round at reasonable prices. Look for mango, pineapple, kiwi and more.
