Potlucks aren't just for dinner. Invite your friends over and ask them to bring their favorite sweet rolls or bagels to share for an early-bird get-together. Here's how to plan a breakfast potluck. Does this Spark an idea?

  • Access to kitchen
  • Counter space or table for dishes
  • 2 8-oz packages cream cheese
  • 1/2 lb. (2 sticks) butter
  • 8 slices white bread
  • 8 oz. shredded cheddar cheese
  • 8 eggs
  • 1/2 lb bacon or sausage
  • 1/2 c. milk
  • 1 tsp. prepared mustard
  • 1/2 diced green pepper
  • 1 cantaloupe, cubed or diced
  • 1 basket blueberries
  • 1 large bunch grapes
  • 2 8-oz cans mandarin oranges, drained
  • Coffee
  • Juice or iced tea

  1. How to Host a Breakfast Potluck

      Invite 6 to 10 friends to stop by on a weekend morning for a breakfast or brunch get-together. Ask each guest to bring one of the following: croissants or sweet rolls, bagels (you can supply cream cheese) or donuts.

      The night before, make brunch casserole. For more than 6 persons, make 2 casseroles and bake one at a time, beginning an hour before guests are scheduled to arrive. Cube 8 slices white bread in 13x9-inch Pyrex baking dish. Pour over mixture of 8 beaten eggs, 1/2 c. milk, 1 tsp prepared mustard, 1/2 diced green pepper, 8 oz. shredded cheddar cheese and 1/2 lb. sausage or bacon, fried crisp and drained. Cover and refrigerate overnight.

      The morning of the potluck, make coffee and have a pitcher of iced tea or cold juice on hand. Set out dishes on table (use colorful paper or plastic plates and plastic silverware to make clean-up easier). Preheat oven to 350 degrees F.

      Thirty minutes before guests are scheduled to arrive, place brunch casserole in oven. Bake for 45 minutes to one hour. Set out the fruit bowl on table. Use grapes, mandarin oranges, watermelon and cantaloupe or other in-season fruit. Set out cream cheese and butter dish. Have a couple of napkin-lined baskets ready for bagels, rolls, donuts and croissants.

      When guests arrive, pour coffee and juice, and arrange rolls, croissants, donuts and bagels in baskets. Set out cream cheese.Remove casserole from oven when top is brown and bubbly and place on table to serve. Breakfast is ready!
