How to Make Veggie Lasagna

This is a simple way to prepare veggie lasagna. Remember any part of the recipe that you do not like and take it out next time you make it! Choose your favorite veggies and you're sure to have a dish that pleases your whole family!

Things You'll Need:

  • Yellow Onion
  • Garlic cloves minced
  • 8 ounce package of mushrooms, sliced
  • Zucchini
  • 16 ounce can tomatoes, undrained
  • Two 6 ounce cans tomato paste
  • Italian Seasoning
  • Sugar
  • Pepper
  • Salt
  • 15 ounces of fat free cottage cheese
  • 1 package chopped spinach, drained
  • 1 box of lasagna noodles, uncooked
  • Fat free mozzarella
  • Parmesan
  • 9x12 inch pan
  • Non-stick cooking spray
  • Aluminum Foil
  • Two bowls
  1. Step 1

    Saute veggies in a pan with very low heat. To do this you will need about 1/4 cup of water in the pan. This recipe calls for 1 cup of chopped onions, 2 cloves of minced garlic, 1 cup of zucchini sliced and an 8 ounce package of sliced mushrooms. Put all of these ingredients in one pan to allow it to simmer cover with a lid. Please remember to season to taste either salt or a salt substitute.

    When the veggies are tender, add tomatoes the 16 ounce can of tomatoes and two 6 ounce cans of tomato paste. Simple tip before adding the paste if the sauce is to bitter sweeten the tomato paste with sugar or a sugar substitute whichever is preferred. Only add about 2 teaspoons of sugar to the paste. Once you have the paste and the tomatoes how you like them add this ingredients in with the veggies allow everything to boil and blend together.This should take no longer then 20 minutes for the veggies and the sauce to be ready.

  3. Step 3

    In a separate bowl, place 15 ounces of fat free cottage cheese and 1 package of chopped spinach thawed and drained. Mix these items together.

    Spray the 9x12 pan with your non-stick cooking spray.

    Put one layer of uncooked noodles down first. Then take the veggie mix layer and place about 1/3 on top of the noodles.

  6. Step 6

    Layer the cottage cheese and spinach blend on top of the veggie mix. Put another layer of noodles on top now and continue to repeat the process of one layer of noodles veggie mix and then the cottage cheese and chopped spinach.But when you have a finished product take a little of the sauce from the veggie mix and spread it on top of the last layer of lasagna noodles then sprinkle your mozzarella cheese on.

  7. Step 7

    Cover the pan with aluminum foil put a few small holes in the foil to allow it to cook faster but not burn. The temperature in the oven should be around 375 degrees for roughly 25 minutes. The lasagna can be uncovered after 25 minutes and baked for an additional 10 minutes to allow the cheese to melt. After the lasagna is totally done, you must allow it to sit for 10 minutes to cool. This should be roughly 8-10 servings of lasagna.

Tips & Warnings
  • Remember if any of the veggies is not the family favorite take it out of the recipe.
  • Please make sure you preheat oven to 375.
  • Keep veggie mix covered while prepping other food.
  • Do not allow cottage cheese or any dairy product to sit out long.
  • Spinach must be thawed or it will make the cottage cheese soggy.
