How to Make Gluten-Free Muffins

Once you've decided to go with a gluten-free diet, whether it's for your health or for other reasons, it's really not that hard to find good food if you know where to look. However, the best way to be sure that you are getting something with zero gluten in it is to simply bake it yourself. There are many good recipes out there, and no shortage of gluten-free cookbooks. This recipe for gluten-free muffins is an adaptation of a traditional bran muffin recipe, and uses brown rice flour in place of the white flour.

Things You'll Need:

  • 2 c. brown rice flour
  • 3 tsp. baking powder
  • 3 Tbs. pure maple syrup
  • 1 egg
  • 1 c. milk
  • 4 Tbs. butter, melted
  1. Step 1

    Preheat the oven to 400 degrees.

  2. Step 2

    Combine the rice flour and baking powder together in a bowl. In another bowl, blend the syrup, egg, milk and melted butter. Pour over the dry ingredients and mix just until moist.

  3. Step 3

    Spoon the batter into greased muffin tins, and bake for 15 minutes, or until a fork inserted in a muffin comes out clean.

  4. Step 4

    Serve for breakfast or as a snack. Makes 12.
