How to Make Great Turkey Meatloaf

Using ground turkey instead of beef gives this meatloaf a lower fat and calorie count, but your friends and family will never guess the truth unless you tell them! The robust flavor of this meatloaf comes from chunky tomato sauce and a liberal dose of herbs and seasoning.

Instructions

Things You'll Need:

  • 2 lb. ground turkey
  • 1/2 cup plain bread crumbs
  • 2 eggs
  • 1/2 cup milk
  • 1 1/2 cups chunky-style pasta sauce (such as Trader Joe's Italian Starter Sauce), divided
  • 1 tsp. each basil, oregano, minced garlic, tarragon
  • 1/2 tsp. black pepper
  1. Step 1

    Preheat oven to 350 degrees. In large mixing bowl, combine turkey, eggs, milk, bread crumbs and spices. Mix well.

  2. Step 2

    Add 3/4 cup chunky tomato sauce and mix well again.

  3. Step 3

    Coat a baking dish with oil spray, then spread meat mixture into dish.

  4. Step 4

    Top with remaining 1/2 cup chunky tomato sauce.

  5. Step 5

    Bake uncovered at 350 for 1 hour. Remove from oven, cut into slices and serve.

Tips & Warnings
  • Leftovers are good cold in sandwiches.
  • Turkey is paler in color than beef, and the meatloaf may not appear brown on top when it's done. To get a nice brown look, position the baking pan under the broiler and broil on high for about 5 minutes.
