Instructions

Things You'll Need:

  • 12 manicotti tubes
  • Filling:
  • 1/4 lb. fresh mushrooms
  • Oil
  • 2 cups cooked chicken meat
  • 1/2 cup cooked spinach, well drained
  • 1/3 cup freshly grated Parmesan cheese
  • 1 egg (or 2 egg whites or egg substitute equivalent to 1 egg)
  • Freshly ground black pepper
  • Sauce:
  • 1 1/2 tbs. flour
  • 2 tbs. melted butter
  • 1 (13 oz.) can evaporated skim milk
  • 1/3 cup plus 2 tbs. Parmesan cheese, grated
  • Freshly ground black pepper
  • Nutmeg
  1. Step 1

    Saute the mushrooms in a little oil.

  2. Step 2

    Chop together with the chicken and spinach into fine pieces. Stir in the Parmesan cheese, egg and pepper.

  3. Step 3

    Cook 12 manicotti tubes according to the package instructions.

  4. Step 4

    Fill the manicotti with the filling and place in an oiled 11 by 17-inch (or 9 by 13-inch) shallow baking dish.

  5. Step 5

    Blend flour and butter, and cook 1 minute over moderate heat.

  6. Step 6

    Gradually add the evaporated skim milk, stirring constantly with a whisk.

  7. Step 7

    Heat until sauce bubbles, then season with pepper and nutmeg.

  8. Step 8

    Remove from heat and add the grated Parmesan cheese.

  9. Step 9

    Pour sauce over manicotti.

  10. Step 10

    Sprinkle with 1/3 cup grated Parmesan cheese and bake. Bake at 375 degrees for 10 minutes or until cheese browns.
