It's easily enhanced by a simple sauce using lime juice, butter and herbs.Don't be put off by the price--there's very little waste with this fish, and with its high protein and low fat ratio, you'll have the satisfaction of knowing you're feeding your family and friends a great meal that's good for them too. Things You'll Need

  • For four:
  • Four 6 to 8-oz halibut filets (Costco sells frozen filets in 2-lb bags for about $19)
  • 2-3 TBSP Butter or margarine
  • 1/8 c. Lime juice
  • 1/4 c. White cooking wine
  • Bay leaf
  • Dried parsley
  • Minced roasted garlic (dried)
  • Tarragon
  • Basil
  • Kosher salt
  • Cracked black pepper

Instructions

  1. Herbed Halibut Bake

    • 1

      Preheat oven to 400.Thaw halibut filets overnight in refrigerator, if frozen (remove from package, place on glass dish and cover with plastic wrap).

      Arrange fish in a single layer in 13 x 9 inch Pyrex baking dish.Dot with butter or margarine. (2-3 tbsp should do it).In a small bowl, combine 1 tsp each:tarragonbasildried parsleyminced roasted garlic (dried)1 bay leafBlend mixture and sprinkle over fish. Season with fresh ground pepper and kosher salt.

      Drizzle 1/8 cup lime juice (fresh or bottled) and 1/4 cup white cooking wine over all.

      Bake uncovered about 30 minutes, or until fish flakes easily with fork.

      Serve with rice and crusty bread.

Tips & Warnings

  • Use lemon juice instead of lime if you prefer.

  • Remove bay leaf before serving.

  • Sole or flounder filets also work with this recipe.
