Things You'll Need:

  • 1 roasting chicken
  • 1 lemon
  • Olive oil
  • Fresh ground pepper
  • Salt
  • Dried parsley
  1. Step 1

    Preheat oven to 400 degrees. Remove chicken from wrapper and rinse thoroughly inside and out. Remove giblets from inside and discard.

  2. Step 2

    Pat chicken dry using paper towels. Place chicken, breast side up, in glass baking dish. Rub inside and out with about 1 to 3 tbsp. good quality olive oil. Add salt, pepper and about 2 tbsp. dried parsley inside and out.

  3. Step 3

    Thinly slice 3/4 of the lemon and place slices inside chicken.

  4. Step 4

    Squeeze juice from remaining 1/4 lemon on top of chicken.

  5. Step 5

    Bake uncovered at 400 for one hour. Chicken is done when drumstick moves easily and skin is browned. Remove from oven, cover with aluminum foil and let rest for 10 to 15 minutes before carving.

Tips & Warnings
  • This recipes serves four. If cooking for more, roast two chickens.
  • Can be made ahead and kept warm up to one to two hours in oven.
  • Add a little white wine or apple cider to pan before cooking, if desired.
