How to Make A Chicken Noodle Stuffing Bake

Create a delicious, homemade chicken noodle stuffing bake with this recipe. This is not a low sodium meal, but it is low in cholesterol. Things You'll Need

  • 8 x 11-inch baking dish
  • 1/2 cup butter or Heartsmart
  • 4 large eggs or egg substitute
  • 2 cans of cream of celery soup
  • 32 oz. of chicken broth or stock
  • 2 boxes of chicken flavored stuffing
  • 1 box of noodles of your choice
  • 3 large boneless, skinless chicken breasts

      Preheat the oven to 350 degrees. Make sure the chicken is thawed completely before you begin. If it is not thawed, you can place it in a microwave for a few minutes on thaw or defrost. Also, set the butter out to soften while you are cooking.

      Begin by preparing your stuffing per the directions on the box. Use a fork to fluff and set the stuffing aside for use in a few minutes.

      Place the entire box of noodles in a pot of boiling water on the stove. Allow them to boil until soft, or al dente. Once the noodles are cooked, strain the water out and set them aside for future use. Pan fry the chicken breasts until they are no longer pink in the middle. Allow them to cool and then cut them into small chunks. Set these aside for future use.

      In the 8 x 11-inch pan, first add in the chicken stock or broth. Add both cans of cream of celery soup and stir until there are no lumps. Add in the butter and stir until dissolved. Add in the eggs or egg substitute and stir until mixed thoroughly. Now add in the noodles and make sure to cover the bottom of the pan evenly so there is noodle in every bite. Spoon chicken pieces on top of this mixture and spread them out so that no area of the mixture underneath can be seen.

      Bake the dish for one hour. After baking, set it aside for 10 minutes before serving so the noodles and chicken absorb the chicken stock thoroughly. This will make enough for an entire meal serving for four people, or a side dish serving for eight.

  • At higher altitudes, please follow the instructions on the stuffing package.

  • If you do not like the dish with much liquid in the pan, you can leave it in for a maximum of one hour and ten minutes.
