How to Make Lemonade Party Cake

Things You'll Need
- Box of lemon cake mix
- Large mixing bowl
- Hand held mixer
- Wooden spoon
- Water (as instructed on the box)
- Eggs (as instructed on the box)
- Vegetable oil (as instructed on the box)
- 13-by-9 non-stick pan
- Medium mixing bowl
- Frozen lemonade concentrate (6-oz. can)
- 3/4 cup powdered sugar
- Fork
- Aluminum foil
- Frosting of your choice or whipped cream
- Frosting spreader or butter knife
- Fresh fruit

Preheat your oven to 350°F. In a large mixing bowl, combine the packaged cake ingredients as well as the water, eggs and vegetable oil, as instructed on the back of the box. Beat the mixture thoroughly with a hand mixer on low speed. Using a wooden spoon, pour the mixture into a greased13-by-9-inch pan, spreading the batter evenly in the pan.

Bake for the instructed amount of time or until the outside of the cake is golden in color and the inside is cooked completely. Stick a fork in the middle of the cake to make sure it is done. When you remove the fork it should be completely clean and devoid of cake batter. Let the cake cool for no more than 5 to 10 minutes.

Mix thawed lemonade concentrate with powdered sugar in a medium mixing bowl. Stir the mixture briskly with a fork until it is smooth, and set it aside. Use the fork to pierce the top of the cake every 1/2 inch, until the entire cake is filled with holes. Carefully drizzle the sugar and lemonade mixture evenly over the warm cake, allowing it to penetrate.

Loosen the cake from the pan by running a knife around the edges of the cake. Cover the cake with aluminum foil and refrigerate it for 2 to 3 hours, or until the cake is chilled.

Remove the cake from the refrigerator. Carefully spread a topping, such as whipped cream or your frosting flavor of choice over the top of the cake. Top with fresh fruit such as strawberries, if desired. Re-cover with the aluminum foil.

Store the cake in the refrigerator until you are ready to eat it. Serve the lemonade cake cold.

Tips & Warnings
Make sure the cake is still warm prior to piercing and pouring the lemonade mixture on top. This will help with the absorption of the lemonade.
Use flavored lemonade powder, such as strawberry or raspberry lemonade to add a unique flavor to your cake.
Experiment with different types of fruit toppings to create a different version of the cake each time.
If you are using a dark non-stick pan, the cooking time may be shorter.
