How to Make Corn and Black Bean Salad

This fresh and easy side dish is great for a summer picnic or use it to in tacos and burritos for a change of pace from normal tomato salsa.

Instructions

Things You'll Need:

  • 1 can of black beans, rinsed and drained
  • 4 ears of cooked corn, removed from cob.
  • 2 bunches of green onions, white and green part, sliced thin
  • 1 medium tomato, seeded and chopped
  • 3 tbsp of chopped cilantro
  • 1 jalapeno, seeded and diced
  • 2 tbsp of olive oil
  • 4 tbsp of lemon juice
  • salt, to taste

    How to Make Corn and Black Bean Salad

  1. Step 1

    Mix beans, corn, green onions, tomato, jalapeno, and cilantro in a bowl.

  2. Step 2

    Add the olive oil and lemon juice.

  3. Step 3

    Toss well.

  4. Step 4

    Add salt to taste.

  5. Step 5

    Refrigerate for at least 2 hours. This can be made one day in advance. Serve cold.

Tips & Warnings
  • For a slightly different flavor, add 1 tsp of garlic powder or cumin.
