Decide just how kosher your event needs to be. Who will be attending? What is the occasion? Depending on your own level of observance, as well as the needs of your guests, you may be able to simply have a kosher-style or dairy event without using a specifically kosher caterer. If this is the case, make sure you communicate any limitations (that you will not be serving pork, for example), to your caterer early on.

Pick your venue carefully. Many venues do not allow you to bring in an outside caterer (meaning you can't have a kosher event there unless the venue itself is kosher), and some venues that do allow you to use an outside caterer still can't accommodate a kosher caterer's needs. For this reason, it might be better to find your caterer first, and then find out which venues he works in.

Step 3
Consider serving a dairy meal, even if you are using a kosher caterer. By serving dairy, you can serve dairy desserts, which are usually better than the faux-dairy desserts served at meat meals.

Find out the venue's alcohol policy. If you are having a strictly kosher event, you also need to serve kosher wine, which your caterer may provide, or which you may need to buy on your own.

Consider special arrangements for observant guests. If some but not all of your guests only eat in kosher restaurants, for example, you may need to provide additional meals for them to consume during a wedding weekend. If you are already using a kosher caterer, you can probably get her to prepare some extra meals ahead of time.
