Basil pesto can be used in a number of dishes.

Fresh basil is readily available in grocery stores and markets but is also quite easy to grow. A pesto is a versatile flavoring for pastas, appetizers and more, and is simple to customize. Add more basil and omit the parsley, for example, swap Romano cheese for the Parmesan, or use walnuts rather than pine nuts. This recipe makes 2 cups.

    • 2 cups fresh basil leaves, firmly packed
    • 3 cloves garlic, minced
    • 1/2 cup pine nuts
    • 1/2 cup chopped fresh parsley
    • 3/4 cup grated Parmesan cheese
    • 1 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 2/3 cup olive oil
    • Food processor or blender
      • 1

        Add the basil leaves, garlic, pine nuts, parsley, Parmesan cheese, salt and pepper to the food processor or blender.

        Process until finely chopped. With the processor still running, pour the oil into the mixture.

        Store the pesto in an airtight container in the refrigerator up to one week. To freeze, place the pesto in small containers, add a thin layer of olive oil on top and then seal and place in the freezer.
